Protein Pancakes That Taste Like a Cheat Meal
Fluffy pancakes, fresh berries, a drizzle of honey, and a protein boost. Who said breakfast had to be boring?
Your next breakfast ritual
A warm stack, fresh fruit and a breakfast worth slowing down for. Make these pancakes your own, whether it is weekend brunch or a regular Tuesday.
Ingredients
- 1 ripe banana
- 2 eggs
- 40 g flour
- 1 scoop Fit2Great Protein Powder, vanilla
- ½ teaspoon baking powder
- A splash of milk, as needed
- A little oil or butter for cooking
Toppings
Fresh sliced strawberries, a handful of blueberries and 1–2 teaspoons honey, to taste.
Optional: cinnamon, Greek yoghurt or chopped nuts.
Make your stack
1. Mix the batter
Mash the banana, whisk in the eggs, then mix in the flour, protein powder and baking powder. Add milk gradually until thick but pourable.
2. Warm the pan
Heat a non-stick pan over medium-low heat and lightly grease it. Protein-rich batter can brown quickly, so keep the heat moderate.
3. Cook and flip
Pour small portions into the pan. Cook for approximately 2–3 minutes, until bubbles appear and the edges begin to set. Flip and cook for another 1–2 minutes, or until cooked through. Timing depends on your pan and pancake size.
4. Finish your way
Stack, add your berries and finish with a light drizzle of honey. Add Greek yoghurt or nuts if you like.
Fluffy, not dry
Do not overdo the protein powder. Adjust the milk gradually, as different powders absorb different amounts of moisture. Smaller pancakes are easier to flip.
THE TOPPING EDIT
Small toppings. Fun facts.
Blueberries: colour with a story
Their blue-purple colour comes from natural plant pigments called anthocyanins. Your breakfast stack has its own colour palette, no filter needed.
Strawberries: not your average berry
Those tiny dots on the outside are called achenes, and each contains a seed. Botanically, a strawberry is not a true berry. Breakfast comes with a plot twist.
Honey: a little goes a long way
Honey adds its own distinctive sweetness, but it still counts as sugar. With ripe banana and fresh berries already in the mix, a light drizzle may be all your stack needs.
