THE SHOPPING LIST

Everything You Need

Ingredients

1 ripe banana 2 eggs 40 g flour 1 scoop Fit2Great Protein Powder (vanilla) ½ teaspoon baking powder A splash of milk, as needed A little oil or butter for cooking

Toppings

Fresh strawberries, sliced A handful of blueberries 1–2 teaspoons raw honey, to taste

Optional Extras

A pinch of cinnamon A little Greek yoghurt Chopped nuts for extra crunch

THE METHOD

Stack It Up

Step 1: Blend the Batter

Add the banana, eggs, oats, protein powder and baking powder to a blender. Blend until smooth. Add a splash of milk if the batter is too thick. No blender? Mash the banana with a fork, whisk in the eggs and mix in the remaining ingredients. A few oat lumps won't ruin your morning.

Step 2: Heat the Pan

Heat a non-stick pan over medium-low heat and lightly grease it. Protein pancakes can brown faster than regular pancakes, so resist the temptation to crank up the heat. We're making breakfast, not charcoal discs.

Step 3: Cook the Pancakes

Pour small portions of batter into the pan. Cook for approximately 2–3 minutes, until the edges begin to set and bubbles appear on the surface. Flip carefully and cook for another 1–2 minutes, or until cooked through. Cooking times depend on the pan and pancake size. Pro tip: Smaller pancakes are easier to flip and tend to hold together better.

Step 4: Add the Toppings

Stack your pancakes and add the sliced strawberries and blueberries. Finish with a light drizzle of honey. Want to take things up a notch? Add Greek yoghurt for extra protein or chopped nuts for a little crunch. Take a photo before the first bite. We both know that stack isn't going to last long.

THE TOPPING EDIT

Did You Know?

Strawberries

Strawberries are a source of vitamin C, which contributes to normal collagen formation and helps protect cells from oxidative stress.

So, while you're adding colour to your pancakes, you're also adding a useful nutrient.

Blueberries

Blueberries Get Their Colour from Plant Compounds

Blueberries contain anthocyanins, natural pigments belonging to a group of plant compounds called polyphenols.

These compounds help give blueberries their characteristic blue-purple colour.

Fun fact: The colour on your plate isn't just decoration. It's a clue to the different natural compounds found in plant foods.

Honey

Honey Is Natural, but It Still Counts as Sugar

Raw honey adds sweetness and a distinctive flavour to your pancakes.

However, natural doesn't automatically mean sugar-free. Honey is still a source of sugars, so a little drizzle can go a long way.

Besides, with ripe banana and fresh berries already in the mix, you may not need as much as you think.

The Secret to Better Protein Pancakes Protein powder can make a great addition to pancake batter, but the right balance matters. Here are three tips for a better result: Don't overdo the protein powder. Too much can make pancakes dry or dense. Keep the heat moderate. Protein-rich batter can brown quickly. Adjust the liquid gradually. Different protein powders absorb different amounts of moisture. The goal is a fluffy stack, not a protein-flavoured doorstop. 🔥 Your Pancake Challenge You've got the recipe. You've got the toppings. Now it's your turn. Make these protein pancakes and give them your own twist. Final Flip Eating well doesn't have to mean eating the same boring breakfast every day. With a few simple ingredients, fresh fruit and a little creativity, you can make a breakfast that's enjoyable, practical and fits into a balanced lifestyle. Save this recipe, give it a try and make it your own. And remember: consistency matters more than perfection. Even when perfection comes with blueberries and honey.
